Born and raised in New England, Chef Al Barboza synthesizes the distinct flavors of home with those of his Portuguese, Italian, and Cape Verdean background. This joining of cuisines is achieved on Chef Al’s Table through fresh, seasonal ingredients at the height of their flavor. Throughout his 19 years at Bloomin’ Brands, the parent company to Fleming’s, Chef Al has fostered a spirit of collaboration, and the Chef’s Table provides a fantastic opportunity to continue encouraging his associates to brainstorm and workshop new ideas. Chef Al draws inspiration from his grandparents’ diverse backgrounds and the extraordinary seafood of New England to create unexpected dishes such as a savory lobster cheesecake.
