Wagyu Origins

Our A5 Japanese Wagyu Beef comes from the renowned Kagoshima Japanese Black Cattle, a breed prized for its ability to develop extraordinary marbling. These cattle are raised in an idyllic environment, where expert farmers carefully tend to them with a specialized (and quite expensive) diet designed to maximize their intramuscular fat content. The result is beef that achieves a perfect balance between rich flavor and tender texture. Each cut of Wagyu steak is derived from specific parts of the cow, known for their ideal combination of marbling and meat.

How We Prepare and Present The Perfect Wagyu Experience

Each 4-ounce cut of Japanese A5 Wagyu is artfully sliced then lightly seared — a hallmark of our steak preparation. Using a high-heat flat top, we caramelize the surface of the Wagyu to create a golden crust that locks in the steak’s delicate flavors and tenderness. It’s then served rare alongside a 650° hot stone and accompanied by precision tongs, dipping sauces and seasonings, including miso glaze, grated horseradish, and black lava salt, inviting you to personalize the final touches.
