The dedication that can be found in Chef Heidi’s kitchen comes from a lineage of passion, family involvement, and a devoted curiosity to the culinary field. She draws her inspiration from her two grandmothers, one of which leaned toward baking while the other excelled at comfort foods like casseroles and stews. Gathering from these experiences, along with pursuing a technical background at a culinary school, Chef Heidi found her niche in the fine dining industry. She joined Fleming’s when she found a family of people who care about their Guests and make a genuine effort to connect with them. Given the liberty to create her own dishes for Chef’s Table, Chef Heidi is constantly adding new ingredients and combinations to her flavor bible. Among these flavors, she leans toward hearty Italian food and Southern-inspired cuisine, but her repertoire is extensive.
