About Chef Rafael Ponce
Chef Rafael has been working in kitchens all over the U.S., starting when he was only 14 as a dishwasher in New York City. Throughout his career, he’s worked in every kitchen position he could get his hands on before coming to Fleming’s Omaha and becoming Chef Partner. Chef Rafael has trained under classical French and Italian chefs and draws a lot of inspiration and passion for food, both from this training and from his Mexican heritage - his father was also a chef and introduced him to the culinary arts at a very young age. His flavors are bold, spicy, and rich, with saffron being one of his favorite ingredients. His Chef’s Table menu brings to life the rich, bold flavors and dynamic creativity that embody the many culinary experiences Chef Rafael has throughout his journey as a Chef.
