When it comes to his approach in the kitchen, Chef Austin considers himself a lifelong learner. Born in Wisconsin, he started his career with Fleming’s in Chicago. When he came to Winter Park, he quickly learned that the palate in central Florida is a cultural melting pot that he was eager to research and learn about more. He is proud to be a part of a restaurant that is so focused on the local community and aims to use the creative freedom behind Chef’s Table to connect classic Fleming’s dishes to the local flavor in Winter Park. Chef Austin’s menu is focused on clean flavor profiles and simple ingredients that allow for true appreciation behind the quality of each dish.
