About Chef Headley Wilson

If you ask Chef Headley about his philosophy as a leader, father, and Chef, he’ll tell you “work hard, and have fun with it.” Born and raised in Jamaica, his mother was a huge influence in his choice to become a chef. Once he completed his culinary training in classic French cuisine, he moved to New York where he continued to explore new flavors and expand his culinary experiences. As his journey continues to evolve, he knows he can use flavors to connect his children to his Jamaican roots and remember the values his mom instilled in him from a very young age: work hard, be creative and love what you do. Headley’s Chef’s Table menu is focused on artistic expression, exploring unique flavor combinations, and experiencing classic recipes with twists that are unique to Fleming’s West Hartford.
