Recommended Food and Wine Pairings When it comes to matching food and wine, there are no hard and fast rules. Mirroring flavors seems to be more foolproof than going against flavors and textures, yet a citrusy, bright Sauvignon Blanc juxtaposed with béarnaise sauce is an example of "going against" and makes for a refreshing pairing. A big, tannic Cabernet Sauvignon is perfect with a richly marbled steak, such as a bone-in ribeye, but would overwhelm a grilled Pork Chop. Tuna Mignon with its intensely flavored peppercorn crust would make this Cabernet appear even more tannic, while a mellower, less tannic Merlot would soothe it. The best advice of all is simply to experiment - the more often, the better.
