About Chef Steve McCarty
Chef Steve’s culinary journey began as a child, captivated by PBS cooking shows and the rhythmic knife work of his grandfather during family dinners. That early curiosity evolved into a lifelong calling, further shaped by formal training at The Cooking & Hospitality Institute of Chicago, a Le Cordon Bleu program. There, he learned from seasoned instructors and refined his skills in the kitchen. Steve’s approach to cooking is grounded in a deep respect for ingredients—from sourcing and preparation to presentation. He believes in honoring every component of a dish, ensuring that each element contributes meaningfully to the whole. Over the past 12 years with Fleming’s, Chef Steve has built a reputation for excellence through mentorship, innovation, and meticulous attention to detail. He takes pride in transforming humble ingredients into memorable meals, particularly when curating braised meat dishes that deliver rich, aromatic depth. As a servant leader, he believes in empowering his team, earning respect through action, and creating a collaborative environment where learning and growth thrive. For Guests, he focuses on crafting personal, high-quality dining experiences, with favorites like the Beef Carpaccio—a balanced, elegant dish perfect for any occasion. Outside the kitchen, Steve finds joy in family, music, the outdoors, and sharing a bottle of wine with his wife. Through the Chef’s Signature Series, Chef Steve continues to combine technical mastery with genuine hospitality, creating food that is thoughtful, timeless, and inspired.
