Chef Jorge discovered his love for cooking through the resourcefulness of his mother. As a child in El Salvador, he watched her transform ordinary ingredients into something exciting and new—a spark that later ignited into a full-blown culinary passion. He began his professional kitchen career at 18 and has now dedicated 22 years to the craft, including 18 years of service and growth at Fleming’s. Self-motivated and ever-curious, Chef Jorge continues to push himself to learn and improve, always striving for excellence. Chef Jorge is best known for his creativity and dedication to customer satisfaction. His signature entrées reflect both thoughtful composition and a personal touch, always made with the goal of making Guests smile. He embraces seasonal ingredients and simple innovation, honoring the integrity of a classic steakhouse while staying inspired by new trends. As a leader, he sets the tone by leading with action, communication, and consistency—encouraging his team to always give their best and lead by example. Outside the kitchen, he enjoys exercise and reconnecting with his Salvadoran roots. A recent steakhouse visit in his home country reminded him how much knowledge and passion he brings to the table—especially when it comes to cooking the perfect steak. Through the Chef’s Signature Series, Chef Jorge continues to share that joy, one flavorful dish at a time.
