About Chef Erik Andresen

Chef Erik’s culinary passion was sparked in his parents’ kitchen, where he often helped prepare meals for large gatherings. Early travel experiences further deepened his appreciation for diverse foods and cultures, laying the foundation for a globally inspired culinary career. After graduating from the American School in London, he earned a B.S. in Food Systems Management from Michigan State University. With a natural affinity for bold and vibrant flavors, Erik is especially drawn to Mexican, Asian Fusion, and South American cuisines while maintaining a deep respect for simplicity and ingredient-driven cooking. For the past 8 years at Fleming’s, Chef Erik has brought a balanced leadership style to the kitchen, combining clear systems and operational excellence with genuine investment in his team’s morale and growth. He believes in connecting with associates and Guests alike, always striving to improve something each day. Whether he’s recreating dishes inspired by his travels or refining a classic NY Strip paired with Fleming’s Potatoes, Erik focuses on food that feels both personal and elevated. Outside the kitchen, he enjoys live music, reconnecting with friends, and discovering new flavors through travel. Through the Chef’s Signature Series, Chef Erik brings a global mindset and a personal touch to every Guest experience, grounded in flavor, consistency, and curiosity.
