About Chef Matt Cook
Chef Matt’s culinary journey began with backyard barbecues in high school and was first inspired by the energy of his uncle’s kitchen during family gatherings. That passion evolved into a professional path when he enrolled at the Art Institute of California – San Diego for Culinary Arts. Since then, he has built a 19-year career in the industry, including 17 years with Fleming’s. From his early days as a pantry cook to becoming a Chef Partner—just steps from where he once worked and dreamed—Matt’s journey is a testament to perseverance, passion, and pride. Known for his creativity and thoughtful execution, Chef Matt finds joy in blending ingredients across cultural borders to build exciting, flavor-forward dishes. As a leader, Matt prioritizes collaboration and consistency, fostering a kitchen culture where every member contributes to the Guest experience. His favorite menu item, the Australian Wagyu NY Strip, exemplifies everything he values in a great dish: bold character, balance, and technical excellence. Outside the kitchen, Matt is a lifelong skateboarder and drummer, bringing that same rhythm, creativity, and movement into his culinary artistry. Through the Chef’s Signature Series, he continues to inspire with flavor, form, and a passion for pushing boundaries.
