Our founders Paul Fleming and Bill Allen had a vision when they opened our original restaurant in Newport Beach, California more than 20 years ago: to create a steakhouse that breaks the stereotype — one that delivered the finest steak and world-class service, in a more modern, warm and welcoming setting. What started as a single restaurant has grown into 65-plus locations across the country, turning us into a family of restaurants that truly feels like family, whether you’re an Associate or a longtime Guest.

Despite our nationwide presence, our California roots still run deep from our wide selection of Napa Valley wines and fresh, in-season ingredients, to our approachable, relaxed-luxury philosophy. As our Guests' tastes and expectations continue to evolve, so do we. Today we continue our founders’ forward-thinking vision by blurring the lines between traditional steakhouse and contemporary cuisine, pushing the envelope while staying true to our origins. We bring this to life through our plant-forward selections, seasonal menus and curated wine dinners, then take it a step further with our hand-crafted cocktails and lively atmosphere.

There are certain details you expect at a fine dining restaurant: pristine tablecloths, chilled salad forks, perfectly tempered wine. Then there are unexpected moments and elevated surprises that stay with you long after you've finished dessert. Those are the ones we excel at.


Guests come for our exceptional Prime steaks, wine, and other entrées, but it’s our personalized service and attentiveness that keep them coming back. It begins the moment you walk into our lively foyer, with a warm greeting and genuine smile. On the way to your table, don’t be surprised if you see one of our Associates skillfully balancing five plates on one arm. Throughout your experience, your dedicated Associates will anticipate your needs, offer guidance on food and wine selections, and give you space when you need it. If it feels like every Associate in the building is focused on serving your needs, it’s because they truly are.


From farm to fork, we’re obsessed with getting your steak right every single time. We begin by selecting the best ingredients. Our USDA Prime beef is proudly sourced from family-run farms across the Midwest. Only 2% of all beef produced in the U.S. passes the prestigious Prime grading test every year. It’s an honor and a privilege to be able to bring our Guests the absolute best every single day. Our Chefs turn those high-quality ingredients into extraordinary dishes using our signature preparation method — a combination of heat, our signature seasoning, and precise timing.


Our eclectic collection of California-inspired red, white and sparkling wines are hand-picked to elevate our Prime steaks and beyond steak entrées. We’ve partnered with some of the very best wineries, including Caymus, Duckhorn and BelleGlos, to bring you a selection that’s full of history, artisanship, and innovation. Every wine has a story to be told and a taste to be savored. Whether you consider yourself a connoisseur or a novice, our knowledgeable Associates and Wine Managers will guide you toward the right selection for you from starters to dessert. Above all, we’ve made sure every selection on our list pairs perfectly with every dish.


Hospitality is at the heart of our mission, and we believe that great hospitality is all in the personal details. It’s why we know many of our returning Guests by name and empower each of our Associates to go above and beyond to surprise and delight our Guests when they feel inspired to do so. We're primarily known for our Prime steaks, but our expertly trained Chefs certainly have a few more aces up their coat sleeves. When it comes to designing perfectly paired wine dinners, creative seasonal menus, and other special events throughout the year, we let our Chefs flex their culinary craftsmanship and work their magic. They source fresh ingredients to create seasonal fare that defies traditional steakhouse expectations, a nod to our California heritage.

Our Associates have an energy and passion for service that's unmatched in our industry. It’s an unspoken quality you can't find on a resume, yet somehow, we always seem to attract individuals who are born with that rare hospitality gene. We also embrace change with open arms, whether it’s adapting our menus to meet Guests' evolving tastes or tapping into creative problem-solving when current events change the shape of our industry.


We are culinary innovators with a heart for hospitality and a relentless spirit for exceeding expectations. If it's not of the highest quality, you won't find it here, and that goes for every item on our menu, from our steak and wines, to our beyond steak entrées and fresh produce. Our Associates receive daily training on our menus and wine list to be the most knowledgeable guide they can be for you and your Guests. We're also dedicated to giving back to the communities we serve. Each week, we donate leftover food to local charity organizations through our partnership with Food Donation Connection.
