Chef John’s culinary journey began humbly as a dishwasher, where his passion for food was sparked by mentors who took him under their wing. Over the years, he rose through the ranks, ultimately spending eight transformative years as Executive Sous Chef under a classically trained French chef. John built his foundation through dedication, experience, and an unrelenting work ethic that has carried him through a 43-year career in the kitchen. Chef John’s culinary philosophy is simple and heartfelt: if he wouldn’t proudly serve a dish to his grandmother, it’s not leaving the kitchen. While he doesn’t claim a signature dish, he’s drawn to the deep, soulful flavors of authentic Cajun-Creole cuisine, particularly gumbo and etouffée crafted with rich, dark roux. As a Chef Partner at Fleming’s for the past five years, John prides himself on creating a warm, welcoming experience for every Guest—often taking time to visit tables personally to ensure perfection. His hands-on leadership style keeps him shoulder-to-shoulder with his team during busy services, fostering a culture of shared goals and high standards. With a love for fishing, traveling, and discovering new flavors, Chef John continues to bring heart and heritage to every plate he serves through the Chef’s Signature Series.
