About Chef Omar Njai
Born in The Bronx, New York and raised in The Gambia, Chef Omar’s passion for cooking was ignited as a child, helping his mother prepare traditional dishes in their family kitchen. That early exposure to rich flavors and heartfelt cooking laid the foundation for a career defined by authenticity and dedication. After moving to the U.S. in 2016, Chef Omar earned his Culinary Arts degree in Boulder, Colorado, and steadily climbed the culinary ladder—from pantry cook in North Carolina to Executive Chef in Tulsa. Along the way, he embraced every opportunity to learn and lead, bringing a unique blend of West African tradition and modern technique to his kitchen. Chef Omar’s culinary philosophy emphasizes simplicity, quality, and bold, honest flavors—rooted in the ocean-fresh seafood of his Gambian upbringing and the vibrant complexity of dishes like his signature Domoda, a rich peanut stew that honors his cultural roots and family legacy. Omar brings intention and artistry to every plate. As a Chef Partner, he’s committed to fostering collaboration, staying curious, and inspiring his team through example and excellence. With nine years in the industry and six years with Fleming’s, Chef Omar is a passionate leader who thrives on creating warm, memorable dining experiences—where every detail, flavor, and moment is just right.
