Chef Carlos found his passion for cooking at a young age while learning alongside his mother, who taught him the value of knowing how to cook with intention and care. That early influence, combined with a formative catering experience under the guidance of a professional chef, set him on a path that led to graduating from Le Cordon Bleu in Orlando and eventually into an 18-year culinary career—10 of them with Fleming’s. His philosophy centers around respecting ingredients, cooking with purpose, and serving with heart, a mindset he brings into every aspect of his work. As a Chef Partner, Chef Los sets a positive example through calm, stoic leadership and a deep well of knowledge. He takes pride in creating personalized experiences for Guests—welcoming regulars at the door, crafting custom appetizers, and ensuring each visit is memorable. Passionate about wok techniques and Japanese flavors, his creations are always visually appealing, aromatically enticing, and thoughtfully balanced.
