About Chef Headley Wilson

Chef Headley’s culinary journey began in the warmth of his family kitchen, cooking nightly dinners with his mother in Jamaica. Though he once imagined a future in accounting, the kitchen’s creativity and energy called him back. He went on to study at the University of Technology in Kingston, receiving classical culinary training under one of Jamaica’s top female chefs. It's because of this formative experience that he remains commited to upholding inclusive leadership in his kitchen. Over 17 years with Fleming’s, Chef Headley has cultivated a culinary style that is both elegant and bold. With strong roots in French technique and a passion for cultural fusion, he brings artistry and flavor to every dish. A true teacher at heart, Chef Headley leads with compassion and consistency, building a team where growth, collaboration, and excellence go hand in hand. His approach to hospitality is holistic—engaging all the senses and connecting deeply with Guests. Beyond the kitchen, he’s a devoted family man, a soccer and cricket enthusiast, and a man of faith.
