About Chef Curtis Mar

Chef Curtis’ culinary journey began with the warm, communal experience of family meals, heavily influenced by his Southern Creole roots. Inspired by the rich flavors and soulful traditions of that cuisine, he pursued his passion professionally, earning a degree in Culinary Arts from the California Culinary Academy in San Francisco. Over the past 29 years—nine of those with Fleming’s—Curtis has honed a philosophy of clean, bold flavors built on fresh ingredients and simple, effective preparation. As a Chef Partner, Curtis leads with intention and high standards, valuing efficient kitchens, strong mentorship, and unwavering consistency in execution. His leadership style is focused and disciplined, built on the belief that quality should never be compromised. Curtis sets the tone in the kitchen by pushing his team to meet their full potential, fostering a culture of hard work and pride. Among his favorite menu items is the Beef Carpaccio—a dish he loves for its purity, freshness, and balance. Outside of the kitchen, he enjoys time with family, golf, and hockey. Through the Chef’s Signature Series, Chef Curtis Mar continues to celebrate timeless steakhouse tradition while elevating each plate with the depth, simplicity, and soul of his culinary roots.
