He started his culinary career as a dishwasher and quickly rose through the ranks at a variety of restaurants, constantly seeking out opportunities to learn new techniques, try new ingredients, and expand his capabilities as a chef and as a leader. At Fleming’s Madison, you’ll find a dedicated team collaborating and working hard under his leadership, and the team is one of his biggest sources for truly local inspiration. On his Chef’s Table menu you’ll find hearty, rich, dishes with lots of fresh ingredients and house-made sauces, drawing on flavors and textures from Italian, Mediterranean, and Mexican cuisine.
