About Chef Jose Ortega

Originally from Mexico City, Chef Jose acquired a passion for food, particularly Mexican cuisine, at a young age. His immediate love for the culinary arts gave him the perseverance to become a sous chef, which eventually brought him to Fleming’s. Working in a food-focused city like Chicago can be difficult for many chefs, but Chef Jose wholeheartedly embraces the challenge as ammunition to constantly reinvent and improve his craft. Chef Jose finds culinary inspiration around the city and in his local community. His favorite culinary expression is through playing with different flavors and textures until each and every dish is perfected.
