About Chef Juan Moreno
Chef Juan’s culinary education has been immersive. In addition to attending culinary school, he grew up in the kitchen learning family recipes with his Latino family, and when he decided to study Asian fusion and flavors, he traveled directly to South Korea to do so. Vietnam and Thailand have also played a role in his experimentation with Asian influences and flavors. Chef Juan uses the lessons he has learned from so many different chefs and culinary styles every day in his kitchen. His passion is cooking and his philosophy as a lifelong learner helps to form the decisions he makes as a leader. Chef Juan works closely with his sous chefs and his entire Fleming’s team to continue ideating and developing recipes for his Chef’s Table menu.
