As Fleming's Corporate Executive Chef, Russell Skall has set a new standard of culinary excellence for the American steakhouse. When it comes to matching food and wine, there are no hard and fast rules. Mirroring flavors seems to be more foolproof than going against flavors and textures, yet a citrusy, bright Sauvignon Blanc juxtaposed with béarnaise sauce is an example of "going against" and makes for a refreshing pairing.
