For Gluten-Free Dining with Full Flavor, Think Small!

This May, the U.S. is recognizing Celiac Awareness Month. There is no known cure for celiac disease, and the only way to control it is by adhering to a strict gluten-free diet. It was just one year ago that I wrote about our Fleming's Gluten-Free Menu. At the time, I said that I was extremely proud of the fact that a guest at Fleming's would be hard-pressed to distinguish it from our regular menu.
Well, the response in the past year has been amazing. Fleming's guests have given an overwhelming thumbs-up for bringing the issue to their attention. There are an estimated 2 million Americans who suffer from celiac disease. Do the math, and it's clear that a lot of us have friends and family who are affected. And it's a shame that plenty of people with celiac just avoid going out because of the hassle of worrying about the menu choices.
At Fleming's Prime Steakhouse & Wine Bar, our menu is almost entirely gluten-free. In fact, of the 50 items that are on our regular menu today, only a dozen contain any gluten products at all. And we've added a fantastic Small Plates menu that is almost entirely gluten-free. Six of the seven items on our Small Plates menu are included on our gluten-free menu with minor modifications:
